Sometimes simple is the best

Need:
1 fresh smoked hamhock (I'm talking from a farm where they both slaughtered the pig and smoked it. There is an awesome farm that sells such ham at the Pittsburgh farmers markets)
4 lbs potatoes
1- 16 oz bag Great Northern Beans
1 - 3 lbs cabbage

Soak beans overnight or do the fast soak (ie.. add beans to enough water to cover. bring to boil. Boil for two minutes. Remove from heat and let soak 1-1.5 hours)

-in enough water to cover (I suggest a five quart pan or larger) boil hamhock until is starts to break apart
- Remove ham from broth and let cool on cutting board
- Cut potatoes into inch to inch and a half slices. Add to broth. Add water if needed
- Shred ham and return to pan.
- Strain beans and add to pan.
- Simmer 1 hour, stirring occasionally
- Add cabbage julliened in inch thick strips (Add more water if needed)
- Cook until cabbage is tender (about 15 mins)

Serve with rolls or bread and butter.

I had mine with homemade apple cider. OMG... I forgot how much I love homemade soups over the summer.
