Recipe: Breakfast Corn Hash

Ing:
1 slice of ham (about 2 oz) or two strips of bacon diced small
1 med potato shredded
1 ear of corn (Shear the kernels off the cob with a sharp knife)
1 pat of butter
2 medium eggs
Enough shredded cheese to sprinkle
Optional: diced tomato and/or mushrooms
Salt, pepper and other spices to taste

-In a frying pan over med heat add meat and start to cook
-After a few minutes add potatoes. Spread evenly over pan and let cook several minutes until they start to become soft
- Add corn and cook until potatoes are done. (about 5 minutes)
- add other ingredients. Cook until egg is done and mix starts to brown
- Once more spread evenly over the pan. Sprinkle with cheese and cover until cheese is melted

Makes 2 servings
