Fried Green Tomatoes.

One large Green tomato per person serving.
1/4 to 1/2 cup of flour
1 Large egg
salt and pepper to taste
1 tablespoon butter.

Cut tomatoes into fairly thin (Approx 1/4 inch) slices this should be done across the round in such a way that the slices have a wheel spoke pattern to the slices as opposed to down the tomato. Yes this is important because otherwise the tomatoes will fall apart.

Beat egg until it slightly foams in a bowl large enough to accommodate slices of tomato.

Mix flour, salt and pepper and sprinkle into a thick layer on a plate.

In a frying pan heat butter.

Once the pan is hot dip tomato slices into egg and them dip both sides into the flour.

Fry in hot pan. Do not turn until the side down is browned. Pan has to be very hot or the flour will peel off. Add butter if needed.

Serve as a side dish to use in the place of meat on a sandwich. I like mine on rye bread with cheese, lettuce and Mayo.
