I just made stinging nettle and spicy italian sausage risotto.
It's....it's really good, if I do say so myself.
The nettles are really mild, but they play well off of the spice from the sausage, and the pecorino romano I tossed in at the end really brings it all together. It's also going really nicely with this sauvignon blanc.
Some nights, it's the simple things.
