Marinate a couple salmon steaks (steaks are better for grilling, but fillets are good for a pan/oven) in: soy sauce, minced ginger, horseradish (be careful here!), and garlic. If you want it spicy you can add some siracha sauce or that thicker Asian chili pepper paste - I add it to ALL my 'spicy' dishes, it really packs a punch!
If grilling, season grill/salmon with oil before grilling or if you wimp out like me, I use foil on the grill (which totally defeats the purpose, don't you think,lol?)
If using pan, pan sear on both sides in clarified butter or oil (I'm a recent convert to clarified butter, it's so delicious because it doesn't burn and it adds that buttery flavor while cooking fish in it) until how firm you want it. (Don't cook it too long or it'll turn tough/dry like cat food, blech!)
If oven - bake at 375 for five minutes, then switch to broil for a couple minutes to get the tops all nice and crispy delicious!
(Okay, sorry that was long - I just love salmon and this is the first thing I make with it when I get it! Oh, how did your Indian food night turn out?
