Spicy Courgette Fritters with Thai Salsa:

(Thai salsa also goes well with salmon or stir-fried beef.)

two tsp cumin seeds
two tsp coriander seeds
one pound courgettes (known as italian squash or zucchini)
four ounce gram flour --- (i used tempura mix)
half tsp bicarbonate of soda
half cup groundnut oil --- (i used castor oil)

For the Thai Salsa
half cucumber, finely diced
two green onions, chopped
four radishes, finely diced
half inch fresh root ginger, grated
five tbsp fresh lime juice
three tsp sugar

Heat the wok, dry fry the cumin and coriander seeds. Cool them, then grind well, using a pestle and mortar.

Cut the courgettes into bite sizes. Process the flour, bicarbonate of soda, spices and salt and pepper in a food processor or blender. Add four ounce water with one tbsp groundnut oil and process again.

Coat the courgettes in the batter, then leave to stand for ten minutes.

To make the salsa, mix together the cucumber, green onions, radishes, ginger and lime juice in a bowl. Stir in the sugar.

Heat the wok, then add the remaining oil. When oil is hot, stir-fry the courgettes in batches. Drain well on kitchen paper, then serve hot with the Thai salsa.

(I also added jalapeno fritters.)

They are good for lunch meal or appetizers. :D
