Since I'm in New Zealand, postage is a concern for anything I order from overseas. With the exchange rate, a massive postage charge ups the purchase to well above it being worth it. So slow/cheap postage works for me.
For ten pages, I would think the small booklet with a stapled centre would work best. It would also allow for posting in an envelope, keeping the cost down for you and your customers. Spiral binding for a small thickness of total pages might not look that good and would add extra charges, I would think.
Something to consider when choosing paper options, is which would work best with the coloured pencils/pens etc. I was given an adult colouring book for Christmas, and it was the opposite of calm and relaxing trying to get the pencils to actually colour on the glossy paper.

Whoo-hoo! Congrats on finishing the book-I'm really looking forward to ordering some! I'd probably get copies for my sister & a friend too (& maybe a spare one to drool on ;-))).
I'd prefer a binding that makes it easy to open the book so the pages lay flat; I guess that would be the center-stapled or comb (spiral) binding. I'd like paper that's as white as practical (over 90 brightness) & easy to pencil, color or marker on, as wings128 mentioned.
I don't remember how you planned to lay out the pages, but I think it's best to leave the back of each coloring area blank. If you press hard on colored pencils or use markers the reverse side is often marked.
I don't have strong feelings about mailing. If it would be OK, tho', I might send along a label & stamp for Priority Mail just because they will be gifts. I don't particularly distrust USPS but I've had bad luck with various companies when they deliver presents, for some reason. :-p
I'll keep you updated. I'm sure we can work out an easy, reliable, way to get it/them to you. :) Also, it will be done on either card stock or heavy weight, white, paper.
I'd say, the least expensive binding that will let the pages lie flat! So, stapled center or spiral is good. Just, it's harder to color if the pages are curving.
I'd also be interested in a printable pdf . . . then you wouldn't have to worry about shipping at all!

Also, purple is good. I think it's genetic.
