Dunno why I'm really posting. This is not news. Except that this is the first time I've had any really good kimchi in a while...
For those of you who don't know, kimchi is a tradictional Korean dish made by fermenting cabbage in spices. In centuries past, the Koreans would bury it in the ground in clay jars to ferment. Nowadays, you can get a specialized refridgerator to ferment your kimchi.
I will warn you, kimchi is an acquired taste. It has to be made just right, and once it sours it has a flavor similar to of fresh earwax and tobasco sauce. It's not for the faint of heart to try. But it is really good stuff when done just right.
