crashing at Nessa's for the weekend, we got pumpkins and decided to roast the seeds.
Found a good way for cooking them...
Place in strainer and Wash thoroughly in warm/hot water to get rid of the pumpkin guts
while seeds are still wet, salt (I like to put salt mix and then add more so they all get a nice coating).
Preheat oven to 325.
Coat a pan with non stick cooking spray.
spead seeds out evenly on pan and coat the seeds with cooking spray (or you could use a little oil before placing them...this helps so they won't burn or stick to the pan)
Place on top rack of oven for 30 minutes.
Flip/Toss/or otherwise move around the seeds so they get evenly toasted
I put another layer of cooking spray on them before putting them back in the oven.
Roast for another 20-25 minutes.
Should be nice and toasty brown when you take them out.
If you like pumpkin seeds extra salty you can add more salt when you pull them out of the oven.
Let cool and enjoy!
