8.16.08 : cake : Erik & Galen

Mrs & Mr Galen and Erik wed on Saturday. I was fortunate to contribute a little to their day with cake.

14" Carrot with Amaretto soak and cream cheese.
10" Spice with Caramel rum buttercream and rum soak
6" Pumpkin Spice with maple cream cheese.
Covered in Chocolate fondant.

Things learned:
1. It is best to buy chocolate fondant as homemade is impossible to work with. A modeling chocolate would have worked.
2. Vegan cake is not that bad (taste wise) but very soft.
3. Need to add more corn syrup and or shortening to my regular fondant recipe.
4. I'm developing OCD
5. Fondant in 104º temperatures does unusual things
