Chocolate Cupcake Surprise!

I made this to bring to my friend, Becca, who just delivered a baby girl this past monday. I figured it's better than just bringing balloons :)

I used Hershey's "Perfectly Chocolate" chocolate cake for the cupcake. I filled the cups halfway through and it yeilded about 30 cupcakes. i baked if for 20 mins (flipped it at 10 mins to cook evenly)

For the "surprise" I cut up a hole on the cupcake dropped a few pieces of mini semi-sweet chocolate chips then dropped about a teaspoon and a half of caramel to melt the chocolate chips. I kept the caramel on low heat to keep it hot as I scoop it into the cuppies.

Then topped with marshmallow frosting and a flower chocolate transfer. (melted candy melts piped in a flower shape)

Caramel recipe
* 2 Tbsp. vegan margarine
• 1 cup lightly packed brown sugar
• 1/3 cup corn syrup
• 1 cup sweetened condensed milk
Directions:
1. In a small saucepan over low heat, melt margarine.
2. Stir in sugar and corn syrup.
3. Bring to the boil and stir in condensed milk, if using.
4. Stirring constantly, cook over medium heat until boiled and thickened.

Marshmallow Frosting
4 egg whites
1 1/4 cup sugar
1-2 tsp vanilla

Heat sugar and egg whites over double broiler till smooth (about 160 deg)

then whisk on med-high/high on mixer with whisk attachment till you get stiff peaks.
