i've been wanting ot cook something fall-tastic. usually my baking year is more end-loaded, but with my rose-cake experiments, and matcha cakes in summer, i guess it felt natural to bake in fall.
I have several familial spice cake recipies, none i remember tasting before because for the most part, if it isn't chocolate there isn't a point to this generation. The one i chose, my Grandma Hilker's one, is one i never tasted because she was too Alzheimer'sy to bake by the time i was old enough to remember tastes. She had sent us cookies often enough that i remember those, but that's all. My aunt, in the nicest and possibly only nice thing she's done for me, collected a lot of those family recipies at my request. In late high school i longed to learn as much as i could from my grandparents while i had them. Soon after developing this passion, about half of them died.
ANYHOW, so i used a base of spice cake, and debated all day about the topping. I considerd a multitude of things, but inthe end decided on a thin layer of vanilla buttercream with a middle dot of chopped pecans held together with some butterscotch that's been in our fridge since jake left. Good stuff all around. I like it, but still wouldn't eat a lot because spice cake isn't my thing. I feel about ginger bread similarly. I still want to make a pumpkiny thing. I substituted applebutter for a lot of the shortning, which made up for the lack of some spiced due to sean's moving. thankfully i have whole nutmeg and cloves so could grind them by hand. perhaps the hand-grinding helped.
