Know what's really, really, really freakin' good on a toasted english muffin? Fresh, homemade pesto, that's what. Holy crap! And then I had more of it for dinner on pasta. NOM NOM NOM NOM NOM.
My recipe:
1 1/2 cups (or thereabouts) fresh basil leaves
3 or 4 garlic cloves, chopped
3/4 cup slivered blanched almonds (or pine nuts)
3/4 cup extra virgin olive oil
3/4 cup freshly grated parmigiano-reggiano
salt & pepper to taste
Introduce the above ingredients to the pulse button on your food processor in this order: the basil, garlic, and nuts, then the oil, then the parmesan and salt and pepper.
Again, I say: NOM NOM NOM NOM NOM.
