spaghetti or ravioli! You can make massive portions. Also, chicken pot pie. Both things keep in the fridge really well. (and when I say pot pie I mean the way we make it here in PA, in a giant pan not as a pie.)

You folks make enormous pot pies up there? Heck yes. Count me in for that.

My current batch-for-leftovers winner is chicken tikka masala curry with rice. I haven't tried freezing in a two-compartment thingy yet; I should try that sometime. I've been freezing it mixed together in the one-compartment thing. It's a little different flavor profile than fresh like that, but it's tasty in a little different way.

I fry up the chicken so it's browned, with oil and onion and garlic, and then add the celery and potato and jarred sauce, and put it over jasmine rice I've made in my rice cooker.

I'm a big fan of rice with soy sauce and grated cheddar cheese also as a very quick to prepare meal (in terms of work time) because it's basically measure rice and water, put it on, and then wait the appointed amount of time, serve, grate cheese.

That sounds really easy. Even I can do that!

These are all great, thanks! And those stuffed tomatoes sound great (and much quicker than the stuffed bell peppers I had a few nights ago). Mmmm.
