As requested, my muffin recipe, as given to me by my office-mate.
This is a great basic recipe, which can be altered in various different ways.

Preheat oven to 200oc (400of). Place muffin cases in a muffin tray.

While I remember, is the recipe for those yummy chocolate brownies you made for childeric's party online anywhere?

Brownies; Thoroughly grease the most non-stick tin you have. Pre-heat oven to GM 4, 150oc.
In a pan, melt 3 oz dark chocolate with 4 oz butter.
When melted, beat thoroughly and allow to cool a little. Add 8oz sugar, 2 oz plain flour, 1 teaspoon baking powder, a pinch of salt and two eggs. Combine, and add 4 oz chocolate chips (or 4 oz mixed toasted nuts if you prefer). Pour into the greased tin, bake for about 30 mins.
When they come out of the oven, leave them to cool in the tin for a while, as the middle tends still to be squishy.

I usually do a double batch, partly because I don't have a baking tin small enough for a single batch!

And while we're swopping recipes, can you remind me how you made those gorgeous chocolate truffles? All I remember from christmas eve is chocolate, cream, butter & more chocolate :)

That's pretty much all there is to it! ;-)

125 ml double cream
2 Tablespoons unsalted butter
1/2 teaspoon vanilla essence
200g chocolate (white chocolate or good quality dark chocolate seem to work best)
Tablespoon of alcohol of your choice
Grated chocolate/ground nuts for coating

Whip the cream until thick.
Melt the butter and the chocolate together and add the vanilla essence (and alcohol).
Stir the chocolate mixture into the cream.
Chill mixture in the fridge until firm, roll into small balls and roll the balls in the grated chocolate/nuts.
Eat chocolates. Feel indulgent! ;-)

Oh well, at least, as Fiona said, the muffins are fairly low in fat. The chocolates are low in everything else, so yeah, that sounds like a balanced diet! ;-)
