cooking like a maniac

Lately I keep... I dunno... making food. As 
cheekyassmonkey put it, "it's therapeutic"  Yes. It really is.

So this morning I decided to make a sort of a frittata, but really it was more like a stratta, because it was baked. Anyway, if you don't know what I'm talking about it's basically an egg and cheese casserole type thing... with yummy bits thrown in.  I put a layer of toasted sourdough bread, cubed, and tossed in a half stick of butter melted on the bottom of the pan. Now for the yummy bits. I wished for a zucchini, but all I had around was an acorn squash, a red pepper, and some parsley. I peeled and sliced up the squash thin and then steamed the pieces until fairly soft. Meanwhile, sliced the red pepper into thin strips and sauteed it in olive oil and cracked black pepper. Layered the cooked squash pieces onto the bread, followed by the pepper slices, and lots of minced fresh parsley. Then for the fun part, the cheese. Let's see... what's in the fridge... sprinkled some gorgonzola on that...  followed by big-ass dollops of cream cheese, then a bit of shredded parmesan, some fresh grated asiago, topped with shredded aged Tillamook extra sharp cheddar. mmm... Mix up about a dozen eggs, with some half and half, a little white wine, some tarragon, basil, garlic, and salt. whip the egg mixture up and pour it over top of the rest... bake that sucker at 350 for about an hour...

and just like that I have breakfast for the rest of the week. :)

[so explain to me how it is I'm losing weight? oh well, no complaints here]

Next time I'll do one with spinach, swiss and nutmeg. YUM!
