I totally forgot to put up this recipe when I made these apple loafs but
synthcat you will totally love these! They are scrumptious and quite easy to make. :D Oh, and they are 'healthy' too!
Well I got the recipe from cooks.com but I've modified it so it's a bit healthier.
1 1/3 cup all-purpose flour
2/3 cup Soy Flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 handfuls of Goji Berries
1 tsp Maca
1 tsp Flax Meal
1/2 cup butter
1 cup white sugar
2 eggs
1 tsp. vanilla extract
1 cup apple, peeled, cored and shredded (or you can use applesauce.
Preheat oven to 350°F. Grease one 9x5-inch loaf pan. (I use three mini pans) Mix together flour, baking powder, soda, salt.
In a large bowl, beat margarine, sugar and 1 egg until smooth. Beat in second egg and stir in vanilla. Stir in shredded apples & berries. Add flour mixture into batter; stir just until moistened. Spread into prepared pan.
Bake for 50 to 60 minutes or until an inserted wooden pick comes out clean. Let stand 10 minutes, then remove from pan. Place on rack to cool.
