salo is one of traditional Eastern European foods often associated with Ukranine but not limited to its territory. It is made with slabs of raw pork fat "salo" that dry-cured (salted and aged) in dark and cold place. Preparing (salting and sometimes smoking) "salo" is a good way of preserving it. As a result "salo" can be stored in a cold place for about a year
