Oatmeal Pancakes
(serves 1-2 people)

3/4 c. Oatmeal (normal or quick oats)
1/2 c. Flour (any type, whole wheat is best in my experience)
1/2 tsp baking soda
1/2 tsp white sugar (or sugar substitute)
1/2 tsp brown sugar (Optional and I usually double this, but it isn't necessary. Or brown sugar substitute)
1/4 tsp salt (not necessary, but it makes it taste better)
1 egg
1 cup milk (butter milk in the original recipe, but any type works, I use 2% or skim usually)
3 tbsp butter (you can substitute oil)
Yes! The batter will be a bit runny! Don't worry about it (if you use skim milk and white flour you can use your spatula or something to gently push the batter back towards the center as it heats up so it isnt too spread out).
Optional:
- you can add more brown sugar to taste
- cinnamon a few dashes (to taste)
- nutes
- mashed banana (if you do this you need to add a bit more baking soda)
Spray a grill or in a pan and use a 1/3 cup measure to scoop the batter out. It should bubble up like a regular pancake and solidify on the edges/brown on the bottom a bit before you flip it. Trial and error works just fine to figure out when/how to flip it correctly. :) Brown on both sides and it should cook just fine!
If you use the brown sugar and cinnamon it tastes a bit like an oatmeal cookie. This is awesome served using preserves/jams on it or with syrup.
