Sunday Post - Guaranteed to make you hungry :P

It's Sunday, so here is just one more post.

Yesterday, hubby ended up staying home - he will be going out this Friday instead, which is actually better since that is when I want some time alone to finish my review in peace :P  So, we had dinner with wine.  Most of the stuff was bought, but I made another batch of ajillo - this time with shrimp and scallops - to go with the french bread.


Today I slept in as I usually do after wine, but I was able to catch up with some posts in the morning and, noticing we had some ripe bananas on hand, I decided to make some double chocolate banana bread with a recipe I pinned on pinterest

I used regular cocoa so it didn't turn out as black as the picture there but YUM! It turned out awesome anyway :)

For dinner, we didn't have very much meat on hand, and didn't have much time to cook rice (since I was making icons until late :P) so I decided to use some canned tuna for a casserole. This is so easy and tastes so good!



I have pots with removable handles, so I just stuck the pot in the oven to bake <3

Easy tuna casserole for 4
(The measurements are not exact, just from memory.)
1 big can tuna
1 onion (chopped fine)
leftover veges and/or mushrooms (I added leftover ajillo which also had red and yellow peppers in it so I got some extra spices in. I also added some leftover potato salad.)
2 heaping tablespoons flour
1 - 2 tablespoons butter
1/2 liter milk (or more)
salt/pepper
1 -2 cubes chicken bouillon (to taste - I always grate the cubes so they melt faster)
cheese 2 or 3 slices cut into cubes, and an additional amount enough to coat the top of the casserole
Parmesan cheese
spaghetti noodles for 4 people - broken in half and boiled

Fry the tuna and onion. Add flour, mix until food is coated and not white anymore. Add butter and fry a bit more. Add the milk and mix. (If it gets too thick, add more milk until thickness is just right.) Add leftover veges. Then add salt/pepper, cheese cubes, Parmesan cheese and bouillon to taste. Combine the noodles and sauce in the casserole dish, add cheese (Parmesan and cheddar) for the top, broil in the oven until the cheese on top is melted and nicely colored. (around 10 - 15 min)

Tomorrow, Alex finds out if he passed the exam for the public school. He is now looking up the various comments about both of the schools as well as their web sites in order to decide which one to pick if he passes. If he doesn't, he will go directly to the private school and apply there. Considering his future, hubby and I have agreed that if he wants he can go to the private school even if he passes the public school exam.
