i start with the vegan with a vengeance recipe but i have to tweak it or it's too wet. so here's my version:
chocolate pancakes
1 ½ to 1 2/3 cup all purpose flour
3 tablespoons unsweetened cocoa powder
2 teaspoons baking powder
½ teaspoon salt
1 to 1 ¼ cups rice or soy milk (i usually use 1 cup of water mixed with 2 heaping tbsp of soymilk powder)
2 Tablespoons canola oil
3 tablespoons maple syrup (i think i will try using just sugar or agave nectar next time)
1 teaspoon vanilla extract
½ teaspoon almond extract (optional)
1/3 cup semi-sweet chocolate chips (i don't always use these, and they're just as good without. especially with the extra peanut butter)
In a large mixing bowl sift together flour, baking powder, cocoa and salt. Create a well in the center of the flour and add milk, water, maple syrup, oil and extracts. Mix until just
combined, fold in chocolate chips. Be careful not to overmix or pancakes will be tough, a couple of lumps is ok.
Preheat a large frying pan over medium-high heat. You can do this about while mixing your ingredients so that it’s ready when you are, it’s a good idea to heat the pan for 2 minutes before adding the oil.
Oil the pan. If making large pancakes, use a ladle to pour the batter into the pan, most standard ladels will yield a 6 inch pancake. For smaller pancakes, drop batter by 1/4 cupfuls onto pan. Cook pancakes until brown on bottom and bubbles form on top,
about 3 minutes. Turn pancakes over and cook until bottoms are brown and pancakes are barely firm to touch. Transfer to plates. Repeat with remaining batter, adding more oil to griddle as needed. Keep warm on a plate covered with tin foil while you cook the others.
peanut butter sauce (for 2 servings)
3 tbsp peanut butter (i use skippy naturals)
3 tbsp agave nectar
2 tbsp maple syrup
whisk. ta-da! soo tasty!

wash and core an apple, peel a banana, throw those into the blender with about 1/2 to 1 cup of orange juice or apple juice (or whatever juice you want) then while the stuff is blending, throw in flaxseeds (optional) and whatever frozen berries or other fruits you like (this time it was a combo of blueberries, raspberries and marionberries) throw them in relatively slowly to keep the blender from freezing the mixture too quickly. when you get to the upper limit of berries, throw them in one at a time. yummo.

this time we tossed in onions and sweet peppers with the potatoes. that's it. just throw them in and cook in some oil. you'll know when they're done.
