pizza potluck party extravaganza

druiaen and xsaltyx came over for the pizza party. druiaen brought brownies and sunny bears, and xsaltyx brought breaded eggplant. druiaen helped scott make the punch. it was tasty. i got to use my new 4 dollar thrift store punch bowl set. we eventually transitioned to 16 oz glasses of punch. hehe.

the laydeez also made the pizza sauce. it was a 32 oz can of crushed tomatoes and a can of diced tomatoes and a 6 oz can of tomato paste and various spices. oregano, basil, fennel, marjoram, rosemary and crushed pepper. it was dayum good!

then i pressed the dough into shape, applied the sauce and FYH cheez. (1 pkg of mozzarella and 1/2 pkg of the monterey jack) and the homemade sausage (i call it sausage because i didn't chill it for 8 hours before "slicing" so it's shreds. but it was still very tasty. (next time, i won't be adding whole peppercorns though. maybe if i crush them a little, but whole corns... meh. then the laydeez applied the other toppins. they also decorated the pretty dessert pizza while i made the ice cream. with kittee's kreamcheez and chocolate chips and dried fruit.

it was a fun night. i am definitely going to hold more. and sadie (the pupper) had so much fun with them. she was being such a good girl. she's much better about not jumping up than she used to be. mind you, she still jumps up, but she's much better. also, she calms down quicker than before. now she's like OMG HIIII!! ok, cool. can i go potty now?

pizza party punch
about 2-3 cups of OJ
1 pitcher of cherry kool-aid
a bottle of martinelli's sparkling apple cider
about half a can of schweppes ginger ale.

crusty pizza dough(from the kitchenaid bowl stand mixer instruction book)
1 package active dry yeast
1 cup warm water (105 to 115 F)
1/2 tsp salt
2 tsp olive oil
2 1/2-3 1/2 cups all purpose flour
1 tbsp cornmeal

dissolve yeast in water, add salt, olive oil and 2 1/2 cups flour. mix 1 minute. add flour 1/2 cup at a time, mix 1 1/2 minutes or until dough starts to clean sides of bowl. knead on #2 for 2 minutes longer. place dough in greased bowl, coating top, to rest for an hour or until doubled. punch down.
brush 14 inch pizza pan with oil, sprinkle with cornmeal, press dough across bottom of pan. add toppings and bake at 450 for 15 to 20 minutes.

(i poured some olive oil in the bottom of my deep dish pan and omitted the cornmeal from that pan. that pizza got the breaded eggplant. for the other pizza, i placed a pizza stone in the oven to heat up, and formed the dough on a cornmealed counter top. slid it onto a pizza peel and shoved it onto the stone. that pizza got the bbq tofu.

Be sure to let this refrigerate overnight before using-the flavors really multiply! This is tender, yest easy to slice thinly.

DRY MIX:
2/3 c. pure gluten powder (vital wheat gluten; Do-Pep)
1/3 c. soy or chickpea flour, or soy protein (isolate) powder
3 T. oat bran
2 tsp. paprika
1 tsp. EACH dry mustard, onion powder and WHOLE black peppercorns
1/2 tsp. Freshly-ground black pepper

WET MIX:
3 T. soy sauce
2 T. ketchup
1 T. Asian (toasted) sesame oil
2 cloves garlic, crushed
1 tsp. Liquid smoke
enough cold water mixed with the above to make 7/8 c.

1/4 c. bulgur soaked with 1/4 c. boiling water (let stand until water is completely absorbed)

COOKING BROTH:
1/2 c. dry red wine (can be non-alcoholic) OR 1/4 c. balsamic vinegar PLUS 1/4 c. water
6 T. water
3 T. soy sauce
1/2 T. olive oil
2 cloves garlic, crushed

Preheat the oven to 325 degrees F.

Mix the dry ingredients in a medium bowl, blending well.

Mix the soy sauce, ketchup, sesame oil, garlic, water and liquid smoke with the soaked bulgur, and then add to the Dry Mix. Stir briefly. Divide into 2 equal portions and roll them on a clean countertop into 2 rolls that will fit (both of them) into an 8x4 and 1/2’ loaf pan, with a little room around each one for expansion. Pour the Cooking broth over them. Cover the pan (use foil if necessary) and bake for 1 to 1 and 1/2 hours, turning every 15 minutes, or until all the liquid is absorbed.

Cool the rolls for at least 8 hours before using(you can freeze them). Slice thinly.

VARIATION: SEITAN “PEPPERONI”

To the Dry Mix ADD 1/2 tsp. Dried red chile pepper flakes, 1/2 tsp. Ground anise seed, and a pinch of groundallspice. Instead of 2 rolls, make 4 thinner rolls and bake in a 9x5” loaf pan.

Pound Cake After Redux [link]
i only changed one small thing in this pound cake, but even if i didn't, i'm sure it'd still have a weird texture. there's no oil? next poundcake i make must use at least 1/2 pound of earth balance.

2 cups white cake flour
4 tsp. baking powder
1 1/2 tsp. salt
3/4 cup cane syrup (see glossary), light maple syrup or honey
1 pkg silken tofu
1/4 cup water
2 tbsp ener-g egg replacer powder
1 tsp. vanilla extract
3/4 tsp. almond extract or orange extract (optional)

PREHEAT OVEN to 350 degrees. Sift together flour, baking powder and salt. In food processor or blender, mix together cane syrup, tofu, vanilla extract, and almond or orange extract if desired, until smooth. Add tofu mixture to flour mixture; stir until combined.

Pour into a nonstick or lightly oiled 9- by 5-inch loaf pan. Bake 30 to 35 minutes, or until golden and top springs to the touch. If needed, tent cake with aluminum foil during last 10 to 15 minutes of baking. Remove cake from pan; cool slightly on wire rack. While cake is still warm, wrap tightly in foil (this will prevent a hard crust from forming on cake). Makes 12 servings.

i poured the batter in my deep dish pizza pan to make the dessert pizza crust. :-)

PB chocolate ice cream i made this one up myself. here's hoping i remember it all.
2.5 - 3 cups of soymilk (i used vitasoy unsweetened original)
1 handful of cashews (mine had salt on them, so i ran them under water to get the salt off.)
about 1/3 - 1/2 cup of coconut shreds
4 tbsp cocoa
about 1 tsp chocolate extract (it was the flavorganics brand. distilled water, alcohol, agave syrup, cocoa powder. this was probably unneccesary, looking at the ingredients.)
1/4 cup chocolate chips
2 tbsp peanut butter
1/4 cup agave (i used the dark stuff)
and 1/4 to 1/2 cup sugar? (sorry, i wasn't paying attention)

blend that stuff til very smooth. put it in the ice cream maker, when almost done, drop smallish globs of PB into the maker, it's done when you want to eat it.
