Note: This post was created several days ago (almost a week) but the internet pooped out on me before I could load it. I don't have internet in my own apartment, it's too expensive, and with my cat being very sick I don't get over to the central building with the wireless connection before now. Sorry for the late posting. My next few posts will all be more healthsome than I normally eat (baring this healthy post) becuase the doctor wants me to eat no more than 1600 calories a day until we figure if this migraine thing is metabolic. Does anyone have any flavorful low caloried recipes?
After 4 days of a migraine, it's amazing I was still eating. I did finally get it to go away, after a trip to the urgent care clinic for an Rx. Anywho, here is a light, hassle free meal for any days when you don't want to, can't, or shouldn't cook.
Main course: Tuna salad on toast. I make this, apparently, a little strangely.
1 can tuna, solid white albacore.
2 boiled eggs
light mayo
sliced green olived with pimentos (I buy the presliced).
Chop eggs, add to tuna. Add lots of olives. Mix with 2 tablespoons light mayo. Spread on toast (I have the whole wheat white bread). This is good for migraine days (if you are capable of eating) because eggs are primo brain food, as is tuna. There is little chopping, and no sharp flavors to offend the nose (one of my issues is that I get really odor sensitive).
Sides:
2 rings canned pinneapple in juice.
1/2 largish tomato, cut into wedges.
These are good becuase, again, no sharp odors. It's soft so no crunching to irritate sore heads. And both are packed with good vitamins and minerals. It wouldn't do to get deficient in something, that will only make matters worse.
So to recap the food groups, 1 slice bread = 1 searving. 1/2 tomato = 1 searving. 2 rings pineapple = 1+ servings. Tuna with eggs = 2 servings protein. A well balanced meal, not too many calories, all with minimum head agravation.
