Pork and Peach Stew with Texas Toast and Healthy Slaw

Here's my first entry.

I forgot to take a picture of my tomato salad on Fourth of July... I'm sure I'll fix it again sometime.

My apologies, I only have the camera on my phone at the moment.  Sometime soon I hope to purchase a real camera... but, that will come in it's own time.




I'm not sure why my LJ cut thingie isn't working...
maybe it's the vista or whatever it is on my husband's computer...

Anyway... 
the Texas Toast Garlic Bread is from Sam's.  The Healthy Slaw is from Hannaford's, so I don't have recipes for them.
The Pork Stew is kind of loose on the ingredient amounts.  
I used about 2 pounds of pork ribs, some with bones.
2 14.5 oz cans of diced tomatoes, slightly drained.
1 large onion, quartered and sliced.
I took all the peaches out of a large bag of frozen vegetables from Sam's.  I tried using canned peaches once, but they disintegrated.  Use frozen ones.
1 tsp basil  (prefer a bunch of fresh basil, leaves sliced, but I didn't have any this time)
1/4 tsp black pepper
1/2 tsp salt
1/4 tsp red pepper flakes
Then you just put it all in a slow cooker, turn it on, go to work for the day.
Come home, take out the pork and peel it apart with a couple forks into chunks.  Return the pork to the slow cooker, stir in and serve.

Another serving suggestion...
try it over rice!
