I had considered the cupcake route, but I guess I'm kind of cake-d out..with good reason - it was my SO's birthday last week and we not only had a ridiculously chocolate-filled cake I made him, but we had a huge section of sheet cake that his work bought for him as well. SOOO much cake! ha! We ate cake every day for a week. Not even kidding! Actually, we froze some of the sheet cake, but there was still a ton of it.
One of my favorite cakes is a lemon cake .. with layers of lemon curd whipped cream frosting. SO good!
I'm trying to find something more along the lines of a breakfast food but the majority of recipes are for desserts (not surprising, given the ingredients in lemon curd.) :) Thought about maybe some kind of pastry or something. I used to make a stuffed (braided) challa bread, and was thinking about using some of the curd as the filling. Or maybe a tart.
I also considered making some fruit based muffins and then stuffing those with the curd. Not too much different than a cupcake, I know!
You know, by the time I actually decide, I'll probably have eaten too much of it to be able to use it for a recipe. ;)
