Hello everyone! I've been a member of this group for a long time, but I've never taken the time to take a picture of my meals or post them. I'm really making an effort to eat healthier and work on my presentation, so I find sharing my meals with all of you as an inspiration! Here's the first:

Food Ingredients: (Serves 4)
Calzone:
1 lb. of your favorite sausage, I prefer hot turkey sausage with pork casings removed
1/2 red onion, thinly sliced
1-2 cups spinach
1-2 tbsp. olive oil
1 package fresh pizza dough
Flour
1 package mozzarella
Preheat the oven to 425 degrees. Heat olive oil over medium heat and brown sausage while making sure to crumble it into small pieces as it browns. About 7 minutes before the sausage is done add onion and cook for about 3 minutes and then add spinach and saute until it is wilted. Divide the pizza dough into 4 pieces and roll each piece out into a round shape, sprinkle flour onto your work surface and rolling pin to prevent sticking. Add a 1/4 of the filling and a handful of mozzarella to each of the rolled out dough pieces. Fold over the dough and press/crimp the edges with a fork. Use a sharp knife to cut 3 parallel lines into the top of each calzone. Use about 1 tbsp. of oil to coat a cookie sheet and place the calzones on the sheet. Bake for 20-25 minutes or until golden brown.
Salad:
1 cup of mixed greens per person
1 small medallion of goat cheese per person
bread crumbs
olive oil
Your favorite balsamic vinaigarette
Rinse and pat dry the mixed greens and place in a bowl. Dip the goat cheese in olive oil and dip into the bread crumbs, coating the top and sides evenly, place on a cookie sheet or piece of foil. Add a desireable amount of balsamic vinaigarette to the mixed greens and toss to coat evenly. When the calzones are finished, place the goat cheese in the oven for about 5 minutes to allow it to melt slightly. Divide the greens evenly among the serving plates and place one medallion of goat cheese on each serving.
Add calzone to plate and you are done! Great meal for two because you easily will have two nights covered :) One night takes 30 minutes and the next 10 minutes.
