Lowfat/reduced sugar graveyard cupcakes!

I love cupcakes. I love lowfat ones even more!






Ingredients: Makes 24 cupcakes
One box pilsbury reduced sugar devil food cake mix
One jar pilsbury reduced sugar chocolate icing
cupcake baking pan and liners
One 12 oz diet coke
2 boxes pepperidge farm milano cookies
Betty Crocker icing tube and tip
ziplock bag
Graham cracker or crumbs (if you only have the sheets you can crumble in a ziploc first)

Instructions:

Mix box of cake mix (DO NOT follow directions!!) with diet coke, whisking well. Preheat oven to 350 degrees. Place mix into your cupcake liners and bake for 18-20 minutes until you can put a toothpick in it and it comes clean. While cupcakes are cooking, ice your milano cookies with sayings, tombstone markers, whatever makes it fun for you. Put them aside so the icing can set. Place cooked cupcakes to cool. When they have cooled, place a "tombstone" into each cupcake. Place your chocolate icing into a ziploc bag and cut the tip to pipe some on each cupcake. Then, take a spoon and mess the icing to make it look like the ground. Crumble graham cracker bits on top of icing to look like fresh dirt.

Each cupcake: 185 cal, 7.3g fat, 31.5 carb, 1.5 fiber, 12 sugar, 1.66 protein.
