A couple of weeks ago, OH's father had sent some tomatoes from his garden. Yesterday, I had roasted a chicken. So, today, I stuffed one of the tomatoes with cottage cheese, tore a few pieces of leftover chicken from the bones, and produced this simple, but satisfying fare.
