I got the idea for these meatballs from Rachael Ray's Chinese Spaghetti and Meatballs. This is my modified version.
1 1/2 pounds ground turkey
1 1/2 large carrots finely grated
2 garlic cloves, minced
4 - 6 scallions, minced
1 teaspoon dried oregano
2 teaspoons dried basil
1 teaspoon cumin
2 cups puffed rice cereal, ground in food processor
1 egg
cooking spray
Preheat oven to 375 degrees (F). Mix all ingreidents in bowl. Scoop out mix with a 1 tablespoon measure. Form scoops into balls. Spray a metal cooling rack well with cooking spray. Place over a large cookie sheet pan (with sides to catch drippings). Place balls on top of cooling rack. Place in oven and cook 10 minutes. Turn balls over. Cook another 5 - 10 minutes until done. Serve with whole wheat penne, spaghetti sauce and roasted asparagus.
