Chicken, Spinach and Carrot Soup with Brown Rice
Ingredients:
- Cooking spray
- 1/4 cup chopped yellow onion
- Shredded carrot (about a cup or so)
- 1/4 cup parboiled brown rice (I used Uncle Ben's)
- 2/3 cup chicken broth
- 1 package frozen spinach, thawed & squeezed dry
- 1 cup chicken broth
- Salt and pepper
Directions:
In a medium sauce pan on medium heat, cook onions and carrots in cooking spray until tender. Add rice and cook until rice is a light golden color, then add 2/3 cup broth. Bring broth to a boil, reduce heat to a simmer, cover and cook until tender, 15-20 minutes.
Add spinach, 1 cup broth, season to taste with salt and pepper. Cook until spinach is hot.
This was really good; however, I think I'd add 1/2 cup of the rice next time. I also needed to add more than 1 cup of broth at the end.
