I love beef stew, and I love using my crock pot. I just made a big pot of this, and every single person who tasted it (including my MOM!!!) wanted my recipe. I don't have a picture (sorry), but it's good stuff. The amounts of ingredients are for my crock pot, which is large.
1 lb stew meat
Montreal Steak Grilling spices
2 small bags of frozen veggies (corn, carrot, green bean mix, but you can use whatever you like)
3 cans of seasoned stewed tomatoes (I like the Italian spiced ones)
1 small can of seasoned tomato paste (again, I use Italian spiced)
1 can of sliced new potatoes (I suggest canned, because fresh get mushy)
2 tablespoons minced garlic
1 can of beef broth
2 cans of chicken broth (you can use all beef, but it has more fat. Also, the garlic chicken broth is great too)
Salt & pepper
I recommend you start this right before bed.
1. Set your oven to broil.
2. Get a pan for broiling. Dump the raw beef in. You don't need to bother separating it.
3. Put a thin layer of the Montreal grilling spices on the beef and broil it for about 5 minutes (so it's brown on one side).
4. Flip the meat, season it again, and broil it until that side is brown.
While the meat is broiling, put all the other ingredients in your crock pot. When the beef is browned on both sides (but NOT cooked through), put it directly into the crock pot. If the broth doesn't completely cover everything, top off with water. Salt & pepper to taste.
Set your crock pot to low, and leave it on overnight. When you wake up in the morning, turn it off first thing. When you're ready to leave for work, put the crock in the refrigerator. When you come home from work, make yourself a nice pan of cornbread, heat up some beef stew, and enjoy a really delicious, filling meal.
