Star Wars Super Nachos

Super nachos

1 package ground beef
1 package taco seasoning
1 Can black beans
1 Package grated cheddar cheese
1 Package tortilla chips
1 Can sliced black olives
1 tomato
1 jar sliced jalapeños
1 can green chilies
1/2 a head of lettuce
1 cup cubed Velveeta cheese
2-3 Tbsps. Milk
guacamole
sour cream

Meatstuff: Brown the meat and drain it. Drain the black beans and add to the meat. Follow the directions on the taco seasoning.

Topping: Dice tomato into little cubes and put them in a small bowl. Drain the olives and add them. Add the green chilies without draining. Dice up a few jalapenos and add them too. Shred the lettuce and keep it to the side.

Cheese sauce: Cube the Velveeta and put it in a bowl. Add two tablespoons of milk and some jalapeño slices. Put in about 1 tbsp of the jalapeno juice in. Microwave for 20 seconds at a time, stirring. Add 1 more tbsp of milk if it's too thick. *Note: Cheese should be a bit runny because it thickens up after a minute or two and if it's too think your nachos will taste too much like Velveeta :p You want a thin sauce, but not watery.

Pour chips into a cake pan. Sprinkle about 1/4 the package of cheese over the chips with a few jalapeño. Back at 350degrees until the cheese is melted onto the chips. Note: Make sure to get the corners and sides! Dry side nachos suck!

Layer the chips with the meatstuff using a slotted spoon. Then use a spoon to drizzle cheese over everything. The next layer is the lettuce. The topping is on the top.

Add globs of guacamole and sour cream throughout

You can add or subtract whatever you'd like or make the cheese sauce thinner/thicker. Banana peppers and fresh chopped herbs are good. Meat can be whatever. I've substituted the beef with ground turkey, deer, and black beans before. It's all good. Serves a small army.

They're called Star Wars Super Nachos because I only make them for all-day Star Wars marathons. ^_~
