taco feast, part deux and trois

i made a taco feast for myself a few days ago. turns out i cant eat as much as i thought i could... ive been living off the remains for the last two days.





i also happened to have some leftover chicken tenders in my fridge, so i decided to make chicken tacos!

i whipped up a spicy ranch sauce for it... its similar to the dressing for my moms taco salad [which is GODLIKE, i will make it sometime].

small tub of sour cream [minus a few spoonfuls i used the nite before]
a drizzle of 3-cheese ranch, enough to cover the surface of the blob of sour cream
about 3/4 of a packet of spicy taco seasoning

mix! you know youve added enough taco seasoning when it is a pleasant orange color.




SO GOOD. i think this is my favorite thing in the world.

to make the chicken tacos:

2 chicken tenders
1 wheat tortilla
handful of lettuce
handful of mexican cheese
spoonful of spicy ranch sauce

reheat the chicken tenders in the microwave. cut into slices. assemble tacos.






i had tons of leftover vegetarian taco mix, and i wanted to make some nachos. i also have this giant tub of brown rice that ive had forever... so! taco brown rice nachos!

1 cup uncooked brown rice
1/2 batch vegetarian taco filling, already made
1/4 can diced tomatoes with jalapenos and chiles
handful mexican cheese
handful lettuce
several spoonfuls of black bean and corn salsa [recipe from my earlier entry]
spicy ranch sauce
blue corn chips or tortillas [scoop or wrap, your choice!]

make brown rice according to package directions [usually takes 45 minutes]. i made mine in the same [unwashed] pan i made the taco filling in the day before, so as to absorb the taco-y goodness. i like a pat of butter in mine too. when the rice is done, add the leftover taco filling and mix. i added the rest of the can of tomatoes and peppers as well.




place a mound of the taco filling and rice on a plate. top with spoonfuls of the black bean and corn salsa, then the cheese, and dollops of the ranch sauce. serve shredded lettuce on the side. scoop with blue corn chips or roll in tortillas. mmm nacho-y.

the ranch sauce is really good by itself, with the chips. i ate this ALL NIGHT.
