Day 21 → A recipe

This is like, the only thing I cook regularly, and one of the only legit recipes I have here. Also! It's the only food I cook. Everything else is cake or cookies or brownies.



This is also not the most exact recipe, either, because I got it off the phone from my mother, who learned from watching her aunt, who got it from her Italian mother, who got it from... her mother I'd guess? IDK.

INGREDIENTS
Broccoli
Olive Oil
Garlic
Salt

(1) Take one bouquet of broccoli, the biggest head you can find, and rinse it.
(2) Chop it into appropriately-sized pieces, like tiny trees.
(3) Place the appropriately-sized broccoli pieces into a microwave safe receptacle, like a bowl or a dish and cover with a paper towel. I usually add a little bit of water before covering it.
(4) Place it in the microwave for four to five minutes on high (I always do five.) When the broccoli comes out, it should be a pretty bright green with bendy stems- not hard.
(5) While the broccoli is in the microwave, place your pan- a big one, the size you'd stir fry in- on the stove. Turn the dial to the notch below the middle. You'll know it's hot enough when you flick a few drops of water onto the surface and it dances around.
(6) While the broccoli is microwaving and the pan is heating up, it is time to chop up your garlic! You can use as much or as little as you like; I usually use half a head of garlic, which is like... four to six cloves. You can slice or dice or smash the garlic- I dice it into little pieces.
(6.5) It's okay if the broccoli comes out before you're done with the garlic-chopping, it'll keep. Drain any excess water from the broccoli.
(7) When the water-test says the pan is hot enough, pour two tbsp of olive oil in and splish it around so that the bottom is coated (or near enough.)
(8) Put the broccoli in! I try to not drop the heads down into the oil, but it won't hurt if they land that way.
(9) Sprinkle the garlic on top.
(10) Turn the heat to the notch above low.
(11) Sprinkle in salt. This is probably the most inaccurate part- I like it a lot saltier than what my mom makes. She suggests a teaspoon, which is waaaay too little for my taste, but it's better to start with a little and build up.
(12) Cook from 20-30 minutes, covered, stirring every few minutes. You can really cook it for up to hour- the longer you cook it, the better it tastes- but I usually just do it for 30 minutes and it's absolutely delicious. 20 minutes is just as good. The broccoli should be soft but not limp.

I made these instructions pretty detailed because I always like recipes to be as detailed as possible, but it's super easy and incredibly delicious. Every time I make it everyone comments on how delicious the kitchen smells, and when we have it home, regardless of what else is being served, it is always the first thing to be demolished by our family. It's so good.
