amandakenney asked my mum's spinach roll recipe some days ago, so here we go.



What you need is:
  • 500 gr of spinach ( today we used frozen spinach, because we didn't have any fresh )
  • 2 eggs
  • cheese as much as you like
  • garlic
  • butter
  • puff-paste ( we buy it ready, just need to cook it )
Melt the butter with garlic in the pot, when it's warm put the spinach and let it cook ( you can put a little of salt at this point also). When it's done turn the heat off and mix one egg with the spinach (the heat of the spinach will start cooking the egg) and some cheese ( we use Grana Padana cheese, but I don't know if you can find it abroad, if it's too expencive or what. I'm sure any kind of cheese will be fine) . Let it cool down.
Open the puff-paste on the table and put the spinach on it, cover with some more cheese (also an other kind than the one we used before...this is really up to your taste) and roll it, until you have a nice roll. Paint (?) the top of the roll with the other egg york.
Put it in the oven at 180°C for about 20 minutes. It could need also less, since the only thing that needs to be cooked is the pff-paste, so check now and then.
