I'm supposed to be in Oxford at the moment, or specifically Blenheim Palace which is near Oxford. Blenheim Palace is a neat palace that's supposed to be all decorated and lit up for Christmas.. but at this point I'm not too sad about missing it because this morning I got to have homemade English pancakes with 4 of my 5 housemates. I really like everyone, it's so nice. Laurene and I had a discussion about the environment and
how one of her classes is making her realize that we should be doing more than we are -
apparently in all of her other classes she learned that with technology we were doing everything
that we could, but now she's finding out it's not enough. Pretty interesting since I've always heard
that we weren't doing enough.
Anyway, I didn't go to Oxford cause Thursday night I suddenly got pretty sick - I was shivering and couldn't really sleep the whole night because my body hurt. Yesterday I rested a lot and Kasi gave me juice, vitamins, and seminola - it's like finer rice pudding and is supposedly English comfort food. I only ate a bit of it but the thought definitely counted. I also decided Scotch broth is a little bit disgusting - it's this soup that everyone says is
really good, pretty much like chicken soup, but the texture is really kind of mucous-y. I had to
not think about it while I was eating the soup cause it would have made me feel more sick. Egh. I had some in Scotland and that was pretty good, maybe it's just the canned kind that's
like that. Either way, I'm not going to be buying it again..
To recap a little from this week, Tuesday's dinner went really well. Pretty much everyone told me the rice/burritos were really good which made me happy. I've never cooked for that many people before and I understand why people like to do it now, it feels pretty good to feed other people something they like. Half the people there (or more) had never heard of refried beans... and for most of them English wasn't their first language so it was a bit difficult to explain, partially cause I don't really know how refried beans are made anyway. I thought they were mostly just smashed up pinto beans but as I discovered when I made myself a burrito the next day with whole pinto beans, that's definitely not the case. Black beans are far superior - I finally found some in ASDA but they're dried and I don't know if I can be bothered to soak them the night before. I do want to make chili though, but maybe I'll wait until I'm back in the US. I hope I keep cooking a lot, cause it's a good pattern to be in. Healthier anyway.
In other news, I finally booked my trip to Wales in a couple of weekends and I'm pretty damn excited about it. It just seems like such a cool place to go. I'm ready for the scenery but hoping the weather cooperates.
