Cake time!!!

This is something I just wanted to share. Found it in one of the women magazines in here. Gluten free cake. 
I baked one for my workmates and the cake vanished in front of my eyes.

BRANDY CAKE
3 eggs
2 dl [0,8 cups] sugar
1 tsp  baking powder
2 tsp vanilla sugar
3 dl [1,25 cups] potato starch
200g [7 oz] butter
3 tbsp brandy
1) Preheat the oven to about 180 C/ 356 F. Grease the cake form and flour it. (I use semolina for gluten free cakes... and sometimes when I'm too lazy to dig up the breadcrumbs)
2) beat eggs and sugar till foamy. Mix dry ingredients together and swift into foam. Fold in carefully
3) melt the butter and heat until boiling. Add to batter while hot, beating strongly. Add the brandy.
4) pour into the cake form and bake in the oven for about 50 minutes. Check the cake with toothpick or similar
Let the cake cool before removing it from the form
5) You can serve cake just like that, or sprinkle conffectioner's sugar on top. or you can pour over some chocolate frosting

And as I always say, use your common sense. If you don't have potato starch or can't use it, substitute with corn starch. Leave brandy out and substitute with extract of sorts, add chocolate to the butter before melting it..  etc etc. Try and error works sometimes wonders in kitchen I tell you.

So, go on grasshopper, go and bake.
