1 cup chunky salsa
1/3 cup peanut butter
2 tablespoons lemon juice
1 tablespoon soy sauce
2 teaspoons finely minced ginger root
1/2 cup chopped peanuts
In 3 to 5 quart crockpot, mix all ingredients except chicken. Add chicken and stir to coat. Cover crockpot and cook on low for 8 to 9 hours or until chicken is thoroughly cooked and no longer pink in center. Sprinkle with chopped peanuts and serve with hot cooked rice. 4 servings.

This was really quite good. At the end I took out the chicken and used some arrowroot to thicken the sauce. I think the one major failing of this is dish is that 8-9 hours for chicken is wayyyyyyyyyy too long. If you plan on making this I'd say do 4-5 hours on low, or until done.
