you need to pit and mash some avocados. like three or four. you need to peel and mince garlic. if youre using three 'cados, then use two cloves of garlic. four 'cados? three cloves. get it? of course you do; youre smart. peel and mince one shallot. get one of those small boxes of grape tomatoes (or cherry). you need to slice the 'maters and then squish out the pulpy goo and the seeds. if you leave them in, your guac will be runny and gross. chop up the flesh of the baby tomatoes. seems like a lot of work but its worth it if you like tomatoes (i do). wash a whole bunch of fresh cilantro. chop off the stems and then mince the leaves as small as possible. get a small container of sour cream (dont even think about using that low fat kind, gross). slice open and scoop out the white veins and the seeds from a jalapeno or two (or three, depending on how hot you like it). squeeze in the juice of at least three, maybe four, limes- you might need more, it depends on how everything tastes after you mix it all up. lastly, youll need a healthy dose of salt. add some at first, then more as you go, tasting all along the way. same with black pepper. wheeeeeeee, guacamole dip.
