It's the final day for my family to celebrate Chinese New Year, which some people may know as the Lantern Festival. I was so excited, tho a bit tired from just getting back from Japan, as there was a dish that my family only makes at that time year.
It is best described as a sashimi salad. I'll have to double check as to what exactly it is called, as it was told to me in Cantonese. ^_^;;
Ingredients:
Raw fish, thinly sliced into small pieces.
Bean noodles, deep fried so they're all puffy
Shrimp chips, the flat kind
Carrots, shredded
Daikon, shredded
Lettuce, shredded
Spring onions, thinly sliced, about 1" long
Cilantro, chopped
Chili, thinly sliced (can added separately when serving)
Peanuts, finely chopped
Oil, a blend of sesame oil and vegetable oil works.
White pepper
Chinese seasoning, aunt's secret recipe (lol)
Sugar
Alcohol, brandy was chosen
Soy sauce.
Instructions:
In a large and deep dish (my family used one that was about an inch deep, 16 inches diameter), place the fish in the middle and marinate in the wine, soy sauce, oil, and seasonings. Mix it around. Next add the vegetables (carrots, daikon, lettuce, spring onions, cilantro, and chili). Toss together lightly. Next add the fried goods and peanuts, then toss. Tada! Salad is ready to serve. My family typically makes several batches as it gets consumed, modifying as needed.
