And there was buttermilk bread (not made by hand, but I'll count it anyway)

From The Ultimate Bread Machine Cookbook

2-1/4 tsp yeast*
3 cups bread flour**
1 tsp salt
2 tbsp dark brown sugar***
2 tbsp unsalted butter or margarine****
3/4 cup water
1/2 cup buttermilk*****
1 tsp lemon juice

(* As usual, I just threw in a tablespoon.)
(** I decided to do half bread flour and half whole wheat.)
(*** I used light, though I'm sure it doesn't make much difference. Or let's say because I'm sure it doesn't make much difference.)
(**** I used coconut oil.)
(***** Subbed two tablespoons powdered buttermilk and 1/2 cup water, since it's what I had on hand.)

Tossed in bread machine on standard bread cycle. (When the fruit/nut addition beep sounded, I threw in some sesame seeds, just for the heck of it.) 2:40 minutes later, we were no longer a breadless household.

I wanted a basic bread and this recipe seemed to fit the bill. (After the persimmon bread, and the sweet potato bread I made next, I wanted something a bit lower prep.) No stumpiness here--the loaf seemed to rise more than usual and I wonder if it's due to the acid elements (the buttermilk and lemon juice). In any case this was tasty and I'll probably make it again.
