Who else is watching the Republican debate right now? Once again, I see it is the Mitt and Newt Show. I can't decide which of them I want to punch in the face the most.

This last weekend, I made Samoa cupcakes, because those are my favorite type of Girl Scout cookies, and they turned out pretty delicious!
This was my first time making cupcakes, and they turned out rather pretty, if I do say so myself. :D
Look at all that delicious coconut. :9
I've never made caramel before, and I didn't realize it would be so easy! And tasty too.
For the chocolate ganache, I used a Green & Black 70% chocolate bar (which is my mom's favorite kind). When I tasted it by itself, I was worried it was too bitter, but it turns out to be a good idea, since it cuts down on the sweetness of the overall product.
Cutting out the top...
... and filling it with caramel! I put in more than the recipe said, about three teaspoons per cupcake. I probably could have put in more too, since when it sort of soaks in to the cake part.
Chocolate on top!
Then put the coconut mixture on top. That shit was delicious, y'all. :9 I still have some left over. Also, I had to let the mixture in the fridge overnight, because I started making all this really late at night, and it needs to be hard enough to scoop out, otherwise it drips over the side of the cupcake.
Sprinkle leftover coconut on top.
And then dump some chocolate on top! I tried to do the little lines of chocolate like they suggest, and like the cookies themselves have, but I didn't have the proper equipment, and my improvisation didn't really work out, so blob it was.
In the end, totally delicious! I highly recommend it. \o/
