It's going to be interesting to see how much nose variety I can squeeze out of a completely flat nose. I'm enjoying the challenge of it. I want them to all look very alien, but different too.
I agree. I've never liked that nose much either, so I'm always happy when my alien kids have the sim parent's nose.

And since I learned that, I've been doing more experiments with SimPe and created contacts and default eyes and skins. Before you know it, you'll do all that stuff too.

I do know about the ear size slider. I'm wondering about shape, not size. There's no way to change that for ears individually, is there? That's such a letdown. I'd also like to be able to adjust the angle of the ears to make them stick out more.

And the ear angle -- how great would that be? You could make all sorts of cool ears without having to resort to custom ear accessories.
As for the ears, I think you can adjust the size of the ears. It's in the same area where you can make the eyes bigger/smaller (the area where you can go just to foreheads or noses or chins).
I know when I was making very slightly pointed ears, I had to toggle between the "full face" sliders and the "parts" sliders (so the face wasn't so elf, just the ears).

I think I'd have to start with that "pointy" template and work my way back by changing individual parts and not the ears. That's so inconvenient and backwards, and it would be way easier if only BodyShop had an option to change ear shape individually. Why didn't they include that? It seems like they should have.
Oh, no you can't edit the SHAPE of the ear, just the size. I bitched up a storm about then when making my self sim. I have very "stick out" ears but they're not really LARGE. There is no "stick out" option for sims.
If you're trying to get the gnarled ears, maybe take a sim that has them and use them as a template? Or you could breed sims in CAS and export their children back out and use the children as templates. Again, it's not the most direct route but it might make for some interesting results.
I've always had to start with the elf template and work backwards, like you said. I guess EAxis didn't think those ears would be so popular, or they forgot that slider.

Awww, she's cute! I like that her nose is slightly larger. That's something I never liked about the original PT.
