Man, I hardly ever post, but I find that I still try to keep up at least 3 times a week.

The holiday has pounced upon us quick and vicious like. I'm spent! In both my physical state and my pocket book. As much as I adore Christmas, I sure hate the commercial aspect of it. It gets worse and worse every year. I tried to keep it fairly simple where my kids are concerned and especially where we adults are concerned but even so, by the time I turned around...I didn't even have pennies left to spare! Craziness. I did my best and that's going to have to be good enough.

Now on to the cooking...
On the menu this year for Christmas:

Christmas Eve:
Empanadas stuffed with an assortment of savory flavors.
Some kind of chicken soup my brother-in-law wants to make.
Other little goodies to tide us over.

Christmas Day:
Green Chili Chicken/Jack Cheese Enchiladas (with homemade NM Green Chili sauce) this will be our first attempt, but I am fairly certain that they will be spectacular.
Beans/Rice/Homemade Guacamole & Salsa
Tamales filled with an assortment of savory flavors.
Other little goodies and desserts to snack on throughout the day.

On a more personal note:
My daughter cries everytime I sing Christmas carols. Perhaps she's trying to tell me something.

I found my very first golden hair right smack center in the very front of my hairline. You can't miss it! It shines like a star and one day I'm fairly certain it will be my very first gray hair. I can't wait!

As is the case with most of you, getting around to posting the goings-ons within our lives is a challenge, especially this time of year. However, I always find that later on, as time progresses, I'm grateful for the opportunities where I can actually pause for a moment, take it in, convey it here, and catch up with those of you who still do the same. I've made alot of good friends here in lj land and that was even more apparent this year than any other.

So, having said that, Thank you LIVEJOURNAL! And Merry Christmas & Happy New Year Ya'll! May the coming year bring us all love, countless good times and some prosperity!
