Our orange/lemon tree is absolutely hanging with fruit, and I just had to pick the beauties. There's a limited number of uses for the oranges though, as I'm allergic. I'm thinking of gifting a few to the neighbours and maybe making marmalade with the rest to give away.
More on the tree!
For lunch and dinner I made tempeh gyro, based on Vegan Dad's
tempeh burger recipe. The only changes I made to the recipe was to add cumin and ground ginger instead of his seasonings, and Trader Joes Oyster Crackers for breadcrumbs. My local Trader Joe's discontinued their breadcrumbs (seriously) and I grabbed the box of oyster crackers impulsively. It wasn't till I got home that I found out they're vegan, which is a great plus. Vital Wheat Gluten's a bugger though, and I struggled with making any sort of shape once the strands of gluten appeared. Instead of flat pieces, I had rolled up fat cigar shapes of the tempeh mix. Pan fry in oil in two batches to brown all over, remove, add chopped onions and garlic to caramelise in the hot pan, then return the tempeh pieces. Sprinkle over a few tablespoons of water, cover tightly with lid, and allow to steam for a few minutes. Serve on flatbread and condiments of choice.
Not the best picture, I know
Lastly, I was able to grab the very last ugly-as-sin cupcakes from Valentine's.
Nom nom nom!
