In a strange twist of events the guy normally on 3rd shift on Thursdays, the day when I work 2nd, called out due to a personal emergency. So instead of doing the hybrid shift for this week I’m now on 3rd tonight and thus all of this week. Good for me I suppose.

As a direct result of this I got to make dinner again tonight, so there’s at least one benefit. Here’s what I did.

Basil, Rosemary, and Lemon Chicken

What you need:
2 Boneless, Skinless Chicken Breasts
1 Lemon (Large)
Ground Sweet Basil
Rosemary

What to do:
Heat oven to 375 F (190 C).

Place the Chicken Breasts into a small baking dish (one just large enough for them to be separated and not touch the sides).

Cut Lemon in half, then slice a thin piece (1/8 inch (3mm)) from each half and set it aside. Take the large pieces and squeeze the juice over the chicken in the baking dish. Remove any seeds.

Lightly dust the Chicken with Basil and Rosemary so that the surface is evenly and almost completely covered. Use equal portions of each spice.

Slice the remaining pieces of lemon once from the center out, then pull the ends in opposite directions to create a small “curl”. Place the curl on the top of each breast of chicken.

Bake for 35 minutes or until juice runs clear and no pink remains in the meat when cut at the thickest portion.

Serve with steamed vegetables and rice (I recommend rice pilaf).

I do so love cooking. I love it a lot. Almost as much as eating. :) Rak seemed to like the dinner too. Second time I’ve made it. She insists that it’s restaurant quality but I duno.

Still working out what’s happening at work. I’ll update you all when the time is right (and I’m legally able to do so).

Mentally... well that’s heavily tied to work at the moment so we’ll see about that too. Had a pretty interesting session today on it and I see the psych tomorrow to go over the blood levels and adjust medications if necessary.
