I just made. The best. Kolacky. In the history of the world. They've completely. Destroyed. My ability to type. Like a normal person.
INGREDIENTS
3c flour
9oz cream cheese (3 - 3oz packages)
1 1/2c butter (3 sticks)
Powdered sugar
Lots and lots of maraschino cherries (four small jars would be about right, so however many that translates to)
EQUIPMENT
Mixing bowl
Spatula
Plate + plastic wrap, or airtight plasticware
Colander
Paper towels
Rolling sheet
Rolling pin
Parchment
Baking sheets
METHOD
Soften butter and cream cheese, covered, just until cream cheese starts to separate. DO NOT soften in microwave.
Cream butter and cream cheese by hand. Mix in flour gradually. Divide into twelve equal portions, roll into balls, cover and refrigerate at least 6 hours.
Drain cherries well, then press gently between paper towels to dry further. Set aside.
Preheat oven to 350, and prepare baking sheets by covering with parchment.
Take out a single ball of dough, leaving the rest in the fridge. Roll in powdered sugar. Press down with heel of hands (it'll probably take both for the first couple of passes, if your dough is properly chilled) until dough makes a 4" round, turning over and dusting rolling surface with powdered sugar between passes. Roll out dough into a 9" circle, turning dough and resugaring your rolling sheet and/or your rolling pin as necessary to keep from sticking.
Cut dough in eight triangles, as you would a pizza. Drop a single cherry at the fat end of each triangle, fold corners in toward the center to cover the cherry, and then roll tightly to the point. Place on baking sheets, 3/4" apart (a standard cookie sheet will hold somewhere between 32 and 40, if you've rolled and placed them right), and bake for 20-25 minutes.
Cool for two minutes on pans, and then move to cooling rack.
Eat.
Spontaneously orgasm.
...
I'm really not even sure that anyone will be able to follow the instructions to roll out, but THIS IS MY CULTURAL HERITAGE, GUYS. Fucking delicious, flaky, cherry-filled cookies.
You can use Solo pie filling (NO OTHER BRAND) instead of whole maraschino cherries - drop by rough half-teaspoons, spread it around the fat half of the dough triangle, and then roll. Or prunes, cut in half (though why you'd want to, I have no idea). Or a pecan filling, the recipe for which I'll go look up if anyone wants it.
Seriously, these are a lot of work, but they are so fucking worth it.
