Fritos Cookies

  • 1 package (9.75-10.5 oz) Fritos
  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup creamy peanut butter
  • Chocolate, to taste

    Grease a 15 x 10 x 1” pan. You can either scatter the corn chips across the pan beforehand, if you want to cut into sections or bars, or have a big metal bowl handy that you put them in if you’d prefer to “drop” them as cookies (I did the individual cookie method). Over medium heat, bring corn syrup and sugar to a boil in a sauce pan, stirring frequently. Allow to boil 1 minute to dissolve sugar and then remove from heat. Stir in peanut butter until smooth. Pour the mixture over the corn chips. To drop them as cookies, I stirred it all around and then dropped using two spoons. The original recipe I had said chocolate was optional, so I don’t have a measure on that… I used 4 blocks of candy making chocolate that I had from making buckeyes, microwaved following package directions and spread across the top of each cookie. I let it sit for about an hour to cool before boxing them up.
