1 chicken breast (sliced thin)
32oz box of broth (or equiv.)
1 lb trader joes stir fry mix or asst. vegetables
3 garlic cloves minced
1 tsp minced ginger
1 serrano pepper minced
1-2 tbsp tamari (or soy sauce)
1/3 package trader joes curry soba noodles
1-2 tbsp (roasted) peanut oil
1/4 tsp curry powder
1/2 cup cashews
1-2 dash fresh ground pepper.
Prepare noodles, set aside.
Heat oil in large wok (high heat) add chicken and stir frequently for a minute.
Add vegetables and tamari. keep stirring almost done (5 or more minutes).
Add garlic, ginger, hot pepper, ground pepper. Cook until done (cooked but still crispy vegetabled and thoroughly cooked chicken).
Add broth and warm.
Grind cashews to powder (I used a coffee grinder. Powder clumps so don't overdo it or you could burn out the grinder). Mix into soup.
The important thing to take away:
Ground cashews to broth=creamy, roasty goodness.
P.S.- Cashews also make me forget when to stop eating though...
