So we're going to try out having the weekly discussion post and the weekend workshop, and just kind of see which one is better, if we need both, if not, etc. Shaking things up a bit on you guys

For me, this will be the first time I have fully plotted and used an outline. Last time I did a chat with friends and threw ideas around and thought I knew in what direction it was generally heading, but I also let the characters dictate where the story was going.
This years story needs detailed plotting and tracking, so I have a doc with all the scenes in it, in order, and also I have put down whose pov each scene will be from. The scenes are all in red and once I complete a scene it gets changed to black. Simple but effective way to keep track.
I have another doc to keep track of the characters and any relevant background info I need.
All of these are in gdocs so that I can access them pretty much when or where ever I need to.
It makes things easy to keep track of. Also when I copy the outline scene bit into my gdoc, then I have an obvious reminder that it I need to delete later once finished writing the scene.
I have also made some dialogue in the fic in purple, as I am directly using some dialogue from an older episode and also it makes me giggle thinking I have purple prose in there!
Funnily enough my betas/alpha readers objected to some Spock dialogue and said it was too casual to be him and he would never say it like that. This was before I changed the colouring of the dialogue. It was pretty much a direct quote from him from an episode! But I did agree with them that TOS Spock was a lot more casual in his speech than nu!Spock is.
I always think I have a good organizational rule, and then my next project will prove it wrong and I'm left trying to figure out something brand new.
But I would say I have a small notebook for thoughts/impressions/research, and then a larger notebook for outlines. I have a lot of issues with creating outlines, but by the end of a rough draft I've usually made one as a roadmap to finish the darn thing. And then I tick off each scene as I've written it.
The small notebook is also handy for story notes, like a phrase I want repeating, or if it's important deets on a character, etc. Very much a brain-storming tool, and it's usually pretty detailed.
But I would say what motivates me to get writing is word wars and talking with my beta. I was just tweeting her story ideas during work today, ha. I always need somebody to bounce my ideas off of, so I know whether they are too far-reaching or whack.
Would it be possible to have a "people interested in doing word wars or otherwise randomly encouraging each other on chat" post here in the support community? Where we could check in whenever and see who's interested in a word war that night? I don't often have time to write on the weekends, and I've been looking on with jealousy when people post about word warring over the weekend. Because that's the only way I get writing done at any reasonable pace, it seems.
Would it work to maybe rename the Weekend Workshops to Week-long/Weekly Workshops? Because I would say I intended those to mostly be open all week long for that sort of thing, and also to always have a new post on the page for people to seek that info. Otherwise I can see a Word Wars post getting buried pretty quickly under discussion posts.
Also if we have two posts a week, either post can be used to ask for word wars, I can imagine.
I like the workshops just being weekend things, I think, but anyone can post anytime about word wars if they're around and want to see if other people are interested in them. Then if it gets buried they can just make a new one. XD

Ha! Isn't that how it always is. I always find my stories balloon too the more I chat about them and share them. There's always a comment that spurs on another idea, and then another idea, and then another... good thing we're supposed to go big for the big bang. ;)
And gah, I envy the non-linear writer! I always get squicked out when I write out of order. Something about my brain, I guess; which is also the same brain that used to stack Starbursts in color-order before eating them, I don't know.
I actually do tend to write out of order. For instance, I'll be sending my beta the first written chapter of my fic within the next week and it's going to be the last chapter. Thank the heavens I planned my fic the way I did, or it wouldn't make any sense to her once so ever.
FYI: I'm using the first two seasons of TNG as a background for the events of my story. I won't have to actually change any of the events in the episodes until 2x19.
